Laksa Sarawak

Laksa Sarawak Recipe

Ingredients:
Laksa Sarawak  Paste - (200 gm)
  1.  8 red onion*
  2.  4 cloves of garlic*
  3. 10-12 stokes of dried chilies * depends on how spicy you want it to be
  4.  1 inch galangal*
  5. 1 small spoon of coriander*
  6. 1  small spoon of cumin seeds
  7. 1 small spoon of white cumin seeds
  8.  3 seeds of candle nuts*
  9.  2-3 lemon grass*
  10.  1 inch saute belacan*
  11. 1/4 cup of ground nuts * fried
  12.  1/4 cup of sesame seed *fried without oil
  13.  a pinch of salt
  14.  oil for cooking

Laksa Sarawak
  1.  200 gm paste
  2.  chicken meat (boil and shredded)
  3. 1/2 kilo of fresh prawn
  4. 1 packet of glass noodles (mihun) *soak in cold water den boil to cook
  5. 4 eggs (fried like omelet and cut into thin slices)
  6. 2 lemon grass (pounded)
  7. 200-250 ml coconut milk
  8. sugar and salt
  9. bean sprouts (blanched)
  10. small amount of coriander leaver (sliced)
  11. some lime (cut into half)

dried prawn sambal –
  1. 6 shallots (blended)
  2. 2 cloves of garlic (blended)
  3. sauted belacan (blended)
  4. 4 big spoons of dried prawn (blended/pounded)
  5. 4-5 big spoon of pounded chilis
  6. a little tamarind water
  7. salt and sugar


How to make :
Paste Laksa -
  1.  Blend all the ingredients marked with (*).
  2.  Ingredients such as sweet cumin / white, cilantro, peanuts and sesame blended or  finely ground prior been mixed together with the ingrediets in step 1.
  3.  Heat the oil. Saute these materials until brownish and fragrant. 4. Add salt and a little of sugar. mix well.
  4. Store in a container and place in the fridge for long term usage.

Laksa Sarawak -
  1. Prepare 2 liters of water in a pot. bring it up to a boil. Then enter the shrimp already cleaned together with lemongrass. Boil until the shrimp is cook. Then take it out. The stew shall not be discarded. Instead to be use as a base to cook the gravy. the laksa sarawak past is entered into the stew and mix well. cook with slow fire. (add water if necessary).
  2.  Enter some seasoning with coconut milk and salt and a little sugar.
  3. Enter the glass noodles into a bowl, place ingredients like bean sprout, eggs, cilantro, s shredded chicken meat and egg. Pour the gravy and squeeze some lime into the gravy some dried shrimp sambal. Serve hot.

Dried shrimp sambal -
  1. Saute all the blended ingredients and chilli and tamarind water until fully cooked.
  2. Seasoned it with salt and sugar. Mix well.
